Component 1: Harvest Quality

Every farmer follows 28 measurable indicators of quality during the harvest season that target the following areas:


  • Coffee Picking
  • De-pulping of Coffee Cherries
  • Optimal Mucilage Removal
  • Coffee Drying
  • Coffee Storage
  • Hygen
  • Water Usage


After the harvest, we then evaluate the farming methods utilized, including pruning methods, fertilization, weed control and shade tree management.  Each farm is monitored every three months and their coffee is cupped and scored at least once a year.  This process continues year after year in order to achieve cupping scores of 85 or above.
